This Juicy Greek Chicken Tenders recipe blends simplicity and flavor, making it perfect for any weeknight dinner or meal prep.

Ingredients

  • 0.5 cup Plain Greek Yogurt
  • 3 tablespoons Olive Oil
  • 2 tablespoons Fresh Lemon Juice
  • 2 teaspoons Lemon Zest
  • 3 cloves Garlic, minced
  • 1 tablespoon Dried Oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 0.5 teaspoon Ground Cumin (optional)
  • 1.5 pounds Chicken Tenders
  • 1 tablespoon Fresh Parsley or Dill, chopped (for garnish)

Instructions

  1. Prepare the Marinade: In a large bowl, combine the Greek yogurt, olive oil, lemon juice, lemon zest, garlic, oregano, salt, black pepper, and cumin (if using). Mix well to create a smooth mixture.
  2. Marinate the Chicken: Add the chicken tenders to the marinade. Ensure each tender is well coated. Cover the bowl and let it sit in the refrigerator for at least 15 minutes, or up to 2 hours for maximum flavor.
  3. Heat the Pan: Preheat a large skillet over medium-high heat. Add a drizzle of olive oil to coat the bottom of the pan.
  4. Cook the Chicken: Remove the chicken tenders from the marinade and let the excess drip off. Place them in the skillet in a single layer, making sure not to overcrowd the pan. Cook for about 5-7 minutes on each side or until the chicken is golden and cooked through (internal temperature should reach 165°F).
  5. Garnish and Serve: Once cooked, remove the chicken from the heat and let it rest for a couple of minutes. Garnish with fresh parsley or dill before serving.

Notes

Don’t skip the marinade time for tenderness. Keep the heat high for a good sear and avoid overcrowding the pan.
