  • 1 medium Red Bell Pepper (or other colorful peppers)
  • 1 medium Yellow Bell Pepper (or red/green peppers)
  • 1 medium Onion (yellow or white onion substitute)

  • 1 tablespoon Ginger (or ground ginger substitute)
  • 2 tablespoons Green Onions (or fresh herbs substitute)
  • 1 tablespoon Sesame Seeds (omit if desired)
  • 2 cups Cooked Rice (or quinoa/noodles alternative)

Instructions

  1. Prep the ingredients: Cut the chicken thighs into bite-sized pieces. Chop bell peppers and onion into strips, and mince garlic and ginger.
  2. Make the sauce: In a small bowl, whisk together the soy sauce, honey, rice vinegar, Sriracha, and cornstarch until smooth.
  3. Cook the chicken: In a skillet over medium heat, add sesame oil and then chicken pieces. Cook for 5-7 minutes until browned and cooked through.
  4. Add the vegetables: Push chicken to one side, and add onions, peppers, garlic, and ginger. Sauté for 3-4 minutes until tender.
  5. Combine with sauce: Pour sauce over chicken and vegetables, stir to coat, and cook for another 2-3 minutes until sauce thickens.
  6. Garnish and serve: Remove from heat, sprinkle with green onions and sesame seeds, and serve over rice or choice of side.
