Indulge in this rich and creamy Bloody Good Halloween Cheesecake, featuring a crunchy chocolate cookie base and a striking blood drip effect, perfect for Halloween gatherings.

Ingredients

  • 150g chocolate cookies
  • 75g unsalted butter (melted)
  • 500g cream cheese (softened)
  • 100g sugar
  • 200g white chocolate (melted)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Cocoa powder (for dusting)
  • Red food coloring (for the blood drip)
  • Water (to achieve desired consistency)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare the crust: Crush the chocolate cookies until fine crumbs form. Mix the crumbs with the melted butter until fully combined. Press this mixture firmly into the base of a springform pan, ensuring it’s even.
  3. Mix the filling: In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Gradually add the melted white chocolate, mixing continuously. Add the eggs one at a time, followed by the vanilla extract, and mix until fully incorporated.
  4. Pour the cream cheese mixture over the prepared cookie crust. Level the top with a spatula. Bake in the preheated oven for 45-50 minutes, or until the center is just set but still slightly wobbly.
  5. Cool the cheesecake to room temperature. Then, refrigerate for at least 4 hours or overnight for best results.
  6. Create the blood drip effect: In a small bowl, mix cocoa powder with a small amount of water and red food coloring until you reach your desired watery consistency. Drizzle this mixture over the top of the chilled cheesecake to create a blood drip effect.

Notes

Ensure cream cheese is softened for easier mixing. Avoid overbaking to prevent cracks and chill thoroughly for best texture.
