Delicious fusion of Korean BBQ flavors wrapped in warm tortillas, perfect for quick dinners or gatherings.

Ingredients

  • 1 lb beef (flank steak or sirloin), thinly sliced against the grain
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon gochujang (Korean chili paste)
  • 8-10 small tortillas (corn or flour)
  • 1 cup shredded cabbage (green or purple)
  • 1/2 cup sliced green onions
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving
  • Sesame seeds for garnish (optional)

Instructions

  1. Marinate the beef: In a bowl, mix the soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and gochujang. Add the sliced beef, ensuring it’s well coated. Cover and marinate for at least 30 minutes.
  2. Cook the beef: Heat a skillet or grill pan over medium-high heat. Remove the beef from the marinade, letting excess liquid drip off. Cook in batches for 2-3 minutes per side until caramelized and cooked through.
  3. Prepare the tortillas: While the beef cooks, warm the tortillas in a dry skillet for about 30 seconds per side or until pliable.
  4. Assemble the tacos: Place a portion of the cooked beef on each tortilla. Top with shredded cabbage, green onions, and cilantro if using.
  5. Serve: Sprinkle with sesame seeds if desired and serve immediately with lime wedges on the side.

Notes

For the best flavor, marinate overnight. Adjust the spice level by varying the amount of gochujang.
