Chicken Vesuvio is a comforting Italian-American dish that combines tender chicken, hearty potatoes, and a fragrant herb-infused broth, perfect for weeknight dinners.

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 cups chicken broth
  • 1 cup white wine
  • 4 medium potatoes, cut into wedges
  • 4 cloves garlic, minced
  • 1 cup frozen peas
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brown the chicken pieces in a skillet with olive oil for about 5-7 minutes on each side.
  3. Sauté the minced garlic in the skillet until fragrant, about 1 minute.
  4. Cook the potato wedges for about 4-5 minutes, stirring occasionally.
  5. Create the sauce by pouring in chicken broth and white wine, then add oregano and thyme.
  6. Nestle the browned chicken pieces among the potatoes in the skillet.
  7. Bake covered in the oven for 45 minutes until the chicken is cooked through.
  8. Add the frozen peas in the last 5 minutes of cooking.
  9. Serve hot, spooning the sauce over the chicken and potatoes.

Notes

For a non-alcoholic version, replace white wine with chicken broth or white grape juice. Avoid overcrowding the pan for better browning of the chicken.
