A delightful dish that balances rich flavors with comforting textures, featuring tender chicken in a creamy chipotle sauce over fettuccine.

Ingredients

  • 1/2 lb. fettuccine
  • 1 lb. chicken breast (cut into cubes)
  • 1/2 tsp salt (divided)
  • 1/2 tsp black pepper (divided)
  • 2 tbsp chipotle in adobo sauce
  • 1 tbsp honey
  • 1/2 cup yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 1 (15 oz.) can diced tomatoes
  • 1 cup heavy cream
  • 1 tbsp butter
  • 1 tbsp oil
  • 1/2 cup corn (frozen)
  • 1/4 cup mozzarella cheese (grated)
  • 1/4 cup parmesan cheese (grated)
  • Fresh parsley (chopped for garnish)
  • Extra parmesan for garnish

Instructions

  1. Season the cubed chicken with 1/4 teaspoon of salt, 1/4 teaspoon of pepper, and honey. Mix well.
  2. Heat a large skillet over medium heat. Add oil and butter, then add the chicken and cook until golden (about 6-8 minutes). Remove and set aside.
  3. Sauté onions in the same skillet until soft (about 7 minutes). Add minced garlic and cook for another minute.
  4. Stir in diced tomatoes, chipotle in adobo, remaining salt, and pepper. Cover and simmer on low for 10 minutes.
  5. Bring a large pot of salted water to a boil. Add fettuccine and cook until al dente; drain.
  6. Add cooked chicken and frozen corn to the sauce, pour in heavy cream, mozzarella, and parmesan, and let simmer for 5 minutes.
  7. Combine drained fettuccine with the sauce, tossing gently to coat.
  8. Serve hot, garnished with parsley and extra parmesan.

Notes

For a milder version, use less chipotle. Fresh ingredients enhance flavor.
