Ingredients

  • 4 chicken breasts
  • 2 cups potatoes, diced
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) so it’s hot and ready when you need it.
  2. Sear the chicken in a large skillet over medium heat with olive oil for about 3-4 minutes on each side until golden brown.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Prepare the sauce by whisking together heavy cream and Dijon mustard, then pour over the chicken in the skillet.
  5. Incorporate the diced potatoes, ensuring they mix well with the chicken and sauce.
  6. Bake in the preheated oven for 25-30 minutes until chicken is cooked through and potatoes are tender.
  7. Garnish with fresh parsley and serve hot.

Notes

You can substitute chicken thighs for a richer flavor or use Greek yogurt instead of heavy cream for a lighter option.
