Ingredients
4 chicken breasts
1 cup heavy cream
2 tablespoons fresh herbs (like thyme, rosemary, and parsley)
2 cloves garlic, minced
Salt and pepper to taste
Zest and juice of 1 lemon
4 potatoes, peeled and chopped
1/4 cup butter
1/2 cup milk
3 carrots, sliced
2 tablespoons honey
Instructions
Season the chicken breasts generously with salt and pepper on both sides.
Sauté the minced garlic in a skillet over medium heat until fragrant, about 1 minute.
Cook the seasoned chicken in the skillet for about 6-7 minutes per side until browned.
Make the cream sauce by pouring in the heavy cream and adding the fresh herbs, simmering for about 15 minutes, or until the chicken is fully cooked and the sauce has thickened.
Prepare the mashed potatoes by boiling the chopped potatoes in salted water until tender, about 15 minutes, then draining and mashing with butter and milk until smooth and creamy.
Sauté the sliced carrots with honey in another pan over medium heat until tender and caramelized, about 5-7 minutes.
Serve the chicken with the creamy sauce poured over it, alongside mashed potatoes and honey-glazed carrots, finishing with a sprinkle of lemon zest.
