A delightful dish featuring rich Romano and Parmesan cheeses with a satisfying crunchy breadcrumb coating, perfect for a quick weeknight dinner or impressing guests.

Ingredients

  • 4 boneless, skinless chicken cutlets (thinned for quicker cooking)
  • 2 large eggs (for the egg wash)
  • ½ cup Romano cheese, finely grated
  • ½ cup Parmesan cheese, finely grated
  • 1 cup herbed breadcrumbs (can use panko for extra crispiness)
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 2 tablespoons olive oil or cooking spray
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F if you plan to bake the chicken.
  2. Beat the eggs in a bowl and season with salt and pepper for the egg wash.
  3. Combine the Romano cheese, Parmesan cheese, breadcrumbs, garlic, and oregano in another bowl.
  4. Dip each chicken cutlet into the egg wash and then into the breadcrumb mixture, ensuring the coating sticks.
  5. Heat olive oil in a skillet over medium heat and cook the cutlets for 4-5 minutes on each side until golden brown. Alternatively, place on a baking sheet and bake for 20-25 minutes, flipping halfway through.
  6. Serve with a salad, roasted vegetables, or your favorite pasta.

Notes

Ensure even thickness for uniform cooking. Let the chicken rest after cooking for juicier cutlets.
