A comforting one-pot dish featuring tender chicken, creamy Velveeta cheese, and hearty potatoes, perfect for busy weeknights or easy meal prep.

Ingredients

  • 8 Potatoes, peeled and cut into small cubes
  • 1 Onion, diced
  • 16 oz Velveeta Cheese, cubed
  • 1.5 lb Boneless, Skinless Chicken, cut into large cubes
  • 8 slices Bacon, cooked crispy and crumbled
  • 1 teaspoon Garlic Salt
  • Pepper, to taste
  • 1.25 cups Milk

Instructions

  1. Prepare your ingredients: Start by peeling and cutting your potatoes into small cubes, dicing your onion, and cubing the Velveeta cheese.
  2. Layer in the slow cooker: Place the cubed potatoes at the bottom of the 6-quart slow cooker.
  3. Add chicken and onion: Layer the chicken cubes on top of the potatoes, followed by the diced onion.
  4. Add bacon and seasonings: Sprinkle the crumbled bacon, garlic salt, and pepper over the chicken and onion.
  5. Pour in milk and cheese: Gently pour the milk over the layers, then add the cubed Velveeta cheese on top, trying to cover as much as possible.
  6. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. Stir occasionally for even cooking.
  7. Serve: If desired, sprinkle more crumbled bacon on each serving before enjoying.

Notes

For best results, cube potatoes evenly and stir occasionally while cooking. Store leftovers in an airtight container.
