A flavorful and easy Crockpot dinner option featuring tender chicken breasts in a creamy peanut sauce, perfect for busy weeknights.

Ingredients

  • 2 lbs chicken breasts (boneless, skinless)
  • 1 cup peanut butter (creamy or crunchy)
  • 1 cup coconut milk (canned for creaminess)
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup honey (for sweetness)
  • 2 cloves garlic, minced (for flavor depth)
  • 1-inch piece ginger, grated (adds warmth)
  • 1 tablespoon lime juice (for acidity)
  • Salt and pepper to taste
  • Cooked rice or noodles (to soak up the sauce)

Instructions

  1. Prepare the chicken: Place the chicken breasts in the bottom of your crockpot.
  2. Mix the sauce: In a bowl, combine the peanut butter, coconut milk, soy sauce, honey, minced garlic, grated ginger, lime juice, salt, and pepper. Stir until smooth and well blended.
  3. Combine: Pour the sauce over the chicken in the crockpot, ensuring the chicken is well coated.
  4. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. The chicken should be tender and easily shred with a fork when done.
  5. Serve: Serve the Thai Peanut Chicken over cooked rice or noodles. Garnish with chopped peanuts and fresh cilantro if desired.

Notes

For a richer flavor, use chicken thighs instead of breasts. Adjust cooking times as necessary based on your slow cooker.
