Delightful pumpkin cream cheese muffins with warm spices and a creamy surprise in every bite, perfect for breakfast or an afternoon snack.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 cup pumpkin puree (canned or fresh)
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.
  3. Combine wet ingredients: In another bowl, mix the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract until well combined.
  4. Combine the mixtures: Gradually add the dry ingredients to the pumpkin mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  5. Prepare the cream cheese filling: In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Fill muffin tin: Spoon about one tablespoon of muffin batter into each muffin cup. Then, add about one teaspoon of the cream cheese filling on top of the batter. Finally, top with an additional tablespoon of muffin batter to cover the filling.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the muffin comes out clean.
  8. Cool the muffins in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, ensure cream cheese is softened to room temperature and don’t overmix the batter. Check for doneness at the 20-minute mark.
