A delightful and fresh approach to dinner, featuring a zesty lemon herb marinade and creamy tzatziki that transforms simple chicken into a flavorful Mediterranean feast.

Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Pita bread
  • Tzatziki sauce (store-bought or homemade)
  • Sliced cucumbers
  • Sliced tomatoes
  • Sliced red onion

Instructions

  1. Prepare the Marinade: In a bowl, whisk together the olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper until combined.
  2. Marinate the Chicken: Add the chicken breasts to the marinade, ensuring they are well coated. Let them sit for at least 30 minutes (or marinate for up to 2 hours in the refrigerator for more flavor).
  3. Preheat Cooking Surface: Preheat your grill or a skillet over medium-high heat, ensuring it is hot enough for a nice sear.
  4. Cook the Chicken: Place the marinated chicken on the grill or skillet. Cook for about 5-7 minutes on each side, or until the chicken is fully cooked (internal temperature should reach 165°F).
  5. Let it Rest: Once cooked, remove the chicken from heat and let it rest for a few minutes.
  6. Warm the Pita: Lightly warm the pita bread on the grill or in a toaster until it’s soft and pliable.
  7. Assemble Your Gyros: Slice the rested chicken into strips and place them on warm pita. Top generously with tzatziki sauce, cucumbers, tomatoes, and red onion.
  8. Serve Immediately: Enjoy your homemade gyros right away.
