Ingredients
2 lbs chicken thighs (boneless and skinless)
1/4 cup olive oil
1/4 cup plain yogurt
3 cloves garlic, minced
2 tbsp ground cumin
2 tbsp ground paprika
2 tbsp ground turmeric
1 tbsp ground coriander
1 tbsp ground cinnamon
1 tsp cayenne pepper
Salt and pepper to taste
Pita bread or wraps
Fresh vegetables like lettuce, tomatoes, and onions
Instructions
Prepare the Marinade: In a large bowl, whisk together olive oil, yogurt, garlic, cumin, paprika, turmeric, coriander, cinnamon, cayenne pepper, salt, and pepper until well blended.
Marinate the Chicken: Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour; for the best flavor, marinate overnight.
Preheat the Grill: Get your grill hot by setting it to medium-high heat, preparing it for the chicken.
Grill the Chicken: Remove the chicken from the marinade and discard the excess. Grill the chicken for about 6-7 minutes per side, or until fully cooked and juices run clear.
Let it Rest: Once cooked, remove the chicken from the grill and let it rest for a few minutes to let the juices redistribute before slicing.
Serve: Serve the sliced chicken in pita bread or wraps with your choice of fresh vegetables.
Notes
Marinate longer for best flavor and monitor the internal temperature for doneness.
