Crispy outside and fluffy inside, Hasselback potatoes are a delightful side dish that transforms simple ingredients into something truly special.

Ingredients

  • 4 medium-sized potatoes
  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • 4 tablespoons butter
  • Chives or green onions (optional for garnish)
  • Sour cream (for serving)

Instructions

  1. Preheat the Oven: Heat your oven to 425°F (220°C).
  2. Prepare the Potatoes: Wash and dry each potato thoroughly.
  3. Slice the Potatoes: Carefully make thin slices into each potato, leaving a little bit at the bottom to hold the slices together.
  4. Arrange on a Baking Sheet: Place the potatoes on a baking sheet with space between them.
  5. Season the Potatoes: Drizzle olive oil over the potatoes and sprinkle with salt and pepper.
  6. Add Butter: Cut butter into small pieces and place them atop the potatoes.
  7. Bake: Bake for 45-50 minutes until tender inside and crispy outside.
  8. Garnish: Cool slightly before garnishing with chives or green onions.
  9. Serve: Serve warm with a dollop of sour cream on top.

Notes

For an extra crispy finish, brush the potatoes with olive oil halfway through baking. Choose starchy potatoes like Russets or Yukon Golds for best texture.
