Ingredients
2 cups cooked brown rice
1 lb tender chicken breast, diced
2 cups mixed veggies (like broccoli, carrots, and bell peppers)
1 cup Greek yogurt
1 cup chicken broth
1 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon dried herbs (like thyme or oregano)
Salt and pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, mix together the cooked brown rice, diced chicken, mixed veggies, Greek yogurt, chicken broth, half of the Parmesan cheese, minced garlic, and dried herbs. Season with salt and pepper to taste.
Pour the mixture into a greased casserole dish and spread it evenly for even cooking.
Sprinkle the remaining Parmesan cheese on top for a delicious, cheesy crust.
Cover the dish with aluminum foil and bake for 25 minutes.
After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the top is golden brown.
Let the casserole cool slightly before serving to allow the flavors to settle.
Notes
Ensure chicken is diced evenly for even cooking. Use fresh herbs for extra flavor.
