A delightful dish that combines tender chicken breasts with a refreshing lemon and basil sauce, perfect for a quick weeknight dinner or special occasion.

Ingredients

  • 1 ½ pounds chicken breast
  • 2 tablespoons butter
  • Salt and black pepper, to taste
  • 2-3 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken stock
  • 3 tablespoons fresh lemon juice
  • 1 ½ teaspoons lemon zest
  • 3 tablespoons chopped fresh basil

Instructions

  1. Prepare the chicken: Flatten the chicken breasts to an even thickness using a mallet or rolling pin. Season both sides with salt and black pepper and set aside.
  2. Cook the chicken: Melt 1 tablespoon of butter in a skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes per side, or until they are lightly browned and cooked through. Remove the chicken from the skillet and set it aside on a plate.
  3. Make the sauce: In the same skillet, melt the remaining tablespoon of butter. Add the minced garlic and sauté for about 30 seconds until fragrant. Whisk in the flour until it’s well combined, creating a roux.
  4. Combine ingredients: Slowly pour in the chicken stock and lemon juice while continuously stirring. This will help to avoid lumps. Add the lemon zest and bring the mixture to a simmer.
  5. Finish the dish: Return the chicken to the skillet and simmer in the sauce for a few minutes, stirring occasionally, until the sauce thickens. Sprinkle with chopped fresh basil, and season to taste with salt and black pepper.
  6. Serve and enjoy: Remove from heat and serve immediately, drizzling extra sauce over the chicken.

Notes

For a lighter version, you can substitute olive oil for butter and use a low-sodium chicken stock.
