A delightful and zesty chicken dish that transforms simple chicken breasts into a vibrant dinner option, perfect for busy weeknights or special occasions.

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon (juice and zest)
  • 1 cup chicken broth
  • 2 tablespoons honey
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat for about a minute.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Cook the chicken in the skillet for about 7-8 minutes on each side until golden brown and cooked through.
  4. Set aside the cooked chicken on a plate.
  5. Sauté the minced garlic in the same skillet for 1-2 minutes until fragrant.
  6. Pour in the lemon juice, lemon zest, chicken broth, and honey. Stir and bring to a simmer.
  7. Reduce the sauce by letting it simmer for about 5 minutes until slightly thickened.
  8. Return the chicken to the skillet, spooning sauce over each piece, and let it cook for another 2 minutes.
  9. Garnish with fresh parsley before serving.

Notes

Ensure the skillet is hot before adding chicken for better browning. Cook in batches if necessary to avoid overcrowding.
