A delightful dish combining tender chicken breasts with a creamy mushroom filling and a luscious garlic Parmesan sauce, perfect for any occasion.

Ingredients

  • 4 chicken breasts
  • 1 cup mushrooms, chopped
  • 1/2 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 cup shredded Parmesan cheese
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a skillet over medium heat. Add chopped mushrooms and minced garlic, sautéing until soft, about 5-7 minutes.
  3. Combine the softened cream cheese, sautéed mushrooms, and half of the shredded Parmesan cheese in a bowl.
  4. Cut a pocket in each chicken breast carefully. Fill each pocket with the mushroom mixture and season the outside with salt and pepper.
  5. Arrange the stuffed chicken breasts in a baking dish, ensuring they are not overcrowded.
  6. Add heavy cream and remaining Parmesan cheese to the same skillet. Stir until smooth and slightly thickened, then pour over the chicken.
  7. Bake in the preheated oven for 25-30 minutes, or until cooked through with an internal temperature of 165°F (75°C).
  8. Garnish with fresh parsley before serving.

Notes

Ensure chicken is of even thickness for even cooking. You can make substitutions like using half-and-half instead of heavy cream.
