Ingredients

  • 1.5 pounds Boneless, skinless chicken breasts
  • 1 pound Baby potatoes, halved
  • 1 packet Ranch seasoning mix
  • 1 can Cream of chicken soup
  • 1 cup Chicken broth
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • Salt and pepper to taste
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Fresh parsley, chopped

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Position them at the bottom of the slow cooker.
  2. Add the halved baby potatoes over the seasoned chicken, distributing them evenly.
  3. Mix the sauce: In a separate bowl, whisk together the ranch seasoning mix, cream of chicken soup, and chicken broth until smooth.
  4. Combine the sauce mixture over the chicken and potatoes in the slow cooker, ensuring everything is coated.
  5. Cook: Cover and cook on low for 360 minutes, or until the chicken is tender and fully cooked, and the potatoes are soft.
  6. Add the shredded cheese about 10 minutes before serving, cover, and allow the cheese to melt.
  7. Garnish: Once cooked, sprinkle fresh parsley over the dish before serving for an extra touch of freshness.

Notes

Check for doneness at the 5-hour mark to avoid overcooking. Serve with extra cheese and fresh herbs for an appealing look.
