An incredibly delicious dish featuring tender chicken in a rich, creamy lemon sauce, perfect for busy weeknights.

Ingredients

  • 4 chicken breasts
  • 1/2 cup unsalted butter
  • 1 cup heavy cream
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • Pasta or rice, for serving

Instructions

  1. Prepare the chicken: Place the chicken breasts in the bottom of your slow cooker in a single layer.
  2. Mix the sauce: In a mixing bowl, combine the unsalted butter, heavy cream, lemon juice, minced garlic, salt, and pepper. Whisk until well blended.
  3. Pour the sauce: Pour the creamy sauce over the chicken breasts in the slow cooker, ensuring they are well coated.
  4. Cook: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is tender and reaches an internal temperature of 165°F (75°C).
  5. Serve: Once cooked, serve the chicken drench in the creamy sauce over your choice of pasta or rice.

Notes

For best flavor, use fresh lemon juice. You can substitute chicken thighs for a more forgiving option in the slow cooker.
