A comforting chicken orzo soup that combines tender chicken, hearty vegetables, and orzo pasta in a savory broth, perfect for chilly days or weeknight dinners.

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup orzo pasta
  • 1 can (14 oz) diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
  2. Cook the chicken: Add the diced chicken to the pot and cook until browned on all sides, approximately 5 minutes.
  3. Add the broth and seasonings: Stir in the diced tomatoes (with juices), chicken broth, basil, oregano, salt, and pepper. Bring the mixture to a boil.
  4. Cook the orzo: Once boiling, add the orzo pasta and let it cook until tender, about 10 minutes. Stir occasionally to prevent sticking.
  5. Final seasoning and serve: Taste the soup and adjust the seasonings as needed. Serve warm and enjoy!

Notes

Brown the chicken well for improved flavor. Customize the vegetables as desired, and use homemade broth for a richer taste.
